Lunch on the go is the prompt for day 19. I wasn’t going anywhere, but I slapped together a quick little open-faced sandwich/toast situation. Bread, artichoke hummus, marinaded artichokes, and fresh parsley.
We also had a quick dinner…take out of vegetable chow mien and eggplant tofu from a new-to-us place. It was okay, a bit oily…not my fave. Lots of leftovers for tomorrow!
