Vegan MoFo Day 1: What’s for breakfast, dude?

I’m not really a big breakfast person. Sometimes I’ll manage a smoothie or a coffee…maybe a meal bar? Mornings are hectic and I just want to focus on dealing with the traffic.


Lately at work, my lunch break has been quite early. It begins somewhere around 10:15 to 10:25 am. Yeah. So I’m counting it as my breakfast for today’s post. It’s simple, but vibrant and summery. I threw in some arugula, sugar plum tomatoes, Persian cucumbers, and mandarins. Accompanied by some delicious figs, homemade pinto beans, and a Tofurky deli slice cut in half and rolled up (…fancy). No dressing or anything.
